AgaveLuz is crafted in partnership with the Montes family, who have been growing agave and distilling tequila for three generations. Cultivated with Care, Harvested at Peak Maturity

At AgaveLuz, everything begins with the agave plant—the heart and soul of true tequila. We source our 100% organic blue Weber agave from Amatitán, Jalisco, deep in the Tequila Valley (Lowlands), where mineral-rich volcanic soil nurtures the plants, creating a distinct, complex flavor profile.

We believe in patience and purity, allowing our agave to grow naturally for at least seven years before harvest. During this time, the plant develops the rich sugars and deep character essential for crafting a smooth, flavorful tequila.

Hand-Selected for Excellence

Our skilled jimadors—master agave harvesters—meticulously hand-select only the finest, fully matured agave. Unlike large-scale operations that prioritize quantity over quality, we harvest in small batches, ensuring that each plant meets our exacting standards.

Peak Maturity – Our agave is harvested at the ideal sugar content (Brix level) for a naturally smooth taste.

No Shortcuts – We never use chemical accelerants to force agave growth—only time and nature.
Hand-Cut for Purity – The bitter stem (cogollo) is carefully removed, leaving behind only the sweetest, most flavorful agave hearts (piñas).

Cooking – Slow, Traditional, and Time-Honored

At AgaveLuz, we believe that great tequila can’t be rushed. Our agaves are slowly cooked for up to three days in traditional stone and brick ovens, a process that preserves the integrity of the agave and enhances its natural sweetness.

Why Slow Cooking Matters

Unlike industrial autoclaves, which cook agaves under high-pressure steam in a matter of hours, our traditional stone and brick ovens allow for a gentle, even caramelization of the plant’s natural sugars. This slow transformation is key to achieving the deep, complex flavors that define AgaveLuz Organic Tequila.

The Process: Patience and Precision

Hand-Loaded into Brick Ovens – Each agave piña is carefully arranged to ensure even heat distribution.

Slow Steam Cooking for Up to 3 Days – Softens the agave fibers and allows the starches to convert into natural sugars.

Deep Caramelization – The extended cooking time develops the agave’s signature rich, sweet, and slightly smoky character.

Resting & Cooling – After cooking, the agaves are left to rest for another 24 hours, allowing them to cool naturally before moving to the next stage.

This slow, meticulous process results in a deeper, smoother flavor—one that mass-produced tequilas simply can’t replicate. Once the agaves have been perfectly slow-roasted, they are ready for the next crucial step—extracting their rich, naturally sweet juice.

Crushing – Extracting the Essence of the Agave

Once our slow-cooked agaves have fully caramelized, the next step is extracting their rich, naturally sweet juice, known as aguamiel—the lifeblood of AgaveLuz Organic Tequila.

Roller Mill Extraction – We use a single roller mill to gently crush the cooked agave, shredding the fibers and pressing out the sweet agave juice. This method ensures that we extract the most flavor while preserving the agave’s natural characteristics.

Multiple Passes for Maximum Flavor – The extraction process is repeated multiple times to release every last drop of pure organic agave essence. This careful method allows us to maintain a deep, full-bodied flavor in every batch.

Sustainability in Action – We ensure that nothing goes to waste. The leftover agave fibers (bagazo) are repurposed for composting and natural fertilization, returning nutrients back to the soil for future agave crops.

Once the extraction is complete, the pure agave juice moves on to one of the most critical stages—natural fermentation.

Fermentation – Letting Nature Take Its Course

At AgaveLuz, we believe in letting the agave speak for itself. That’s why we rely on 100% natural, open-air fermentation—without commercial yeast or accelerators.

Open-Top Stainless Steel Tanks – Our fermentation takes place in open-air tanks, allowing the natural wild yeasts from the Tequila Valley to interact with the agave juice. This slow, spontaneous fermentation creates deeper, more complex flavors.

Up to 10 Days of Natural Fermentation – Unlike mass-produced tequilas that rush fermentation in just a day or two, we allow up to 10 days for the process to unfold at its natural pace. This extended fermentation develops richer, more refined flavor notes.

Nothing Added—Ever – We use only agave and deep-well water. No added sugars, no yeast accelerators, no shortcuts—just time, tradition, and patience.

Once fermentation is complete, the now agave-infused mash is carefully transferred for distillation, where it will be refined into the purest form of organic tequila.

Double Distilled for Exceptional Quality

Aging – Time, Oak, and Balance

At AgaveLuz, we believe aging should enhance the agave, not overpower it. That’s why we carefully select American oak barrels to develop complexity while preserving the pure essence of organic blue Weber agave.

The Aging Process: A Perfect Harmony

Hand-Selected American Oak Barrels – We use barrels that have been carefully re-chipped and re-charred, allowing the tequila to absorb the perfect balance of oak influence while maintaining the agave’s natural character.

Aging for Just the Right Time – Each expression of AgaveLuz is aged to perfection:

  • Reposado – Aged for at least 6 months, developing soft vanilla, caramel, and light spice notes.
  • Añejo – Aged for 18 months, creating a deeper, richer profile with oak, dried fruit, and butterscotch.
  • Extra Añejo – Extra Añejo – Aged for an extraordinary 12 years—one of the longest-aged organic tequilas in the world. This ultra-premium tequila offers an unparalleled depth of flavor, with layers of chocolate, toasted oak, and warm spice, making it a true collector’s bottle.
