Where is AgaveLuz Organic Tequila made?

AgaveLuz organic tequila is grown and produced slowly and organically in Amatitán, Jalisco, Mexico at Tequila Las Americas (NOM 1480). Our good friends at Tequila Las Americas, the Montes family, are three generations of agave farmers and distillers.

What is the mentality behind making AgaveLuz Organic Tequila?

AgaveLuz organic tequila is made the way tequila was made well over 100 years ago. At AgaveLuz organic tequila, we use old-world machinery and processes to create an amazing tequila experience! We embrace the lost art of tequila making as if one stepped into a time-machine. AgaveLuz organic tequila proves what tequila is supposed to taste like prior to commercialization of the industry. We have a production process that respects the environment and favors quality over quantity. We take our time, produce only in small batches, and are proud of what we do. We oversee every step of the process with tremendous attention to detail to help create a clean tequila that stands above all the rest.

Agave – Meticulus Planting and Harvesting Techniques

best organic tequilaOur agaves come from the heartland of tequila, known as Amatitán, Jalisco, Mexico. We allow them to grow and mature for at least 8 years before they are harvested.  The agave that grows around our distillery are very sweet and mineral-rich, and have a lot to do with the signature aromas and flavors inside of AgaveLuz Organic Tequila.  These mature agave plants can grow to be very large. On average, each plant can produce about 8 or 9 bottles of tequila.  Harvesting in small batches from a single estate, our “jimadors” are meticulous in their technique and specially trained harvest these giant blue organic agave plants.  We hand select the best, fully-matured agave and carfully remove the bitter stem, to ensure that with each harvest, our agave’s Brix level (sugar content) meets our high standards, for a better tasting, smooth tequila.

Cooking – Slow cooked in brick ovens & Fermented Naturally

Agaves are slowly cooked for 48 hours in our very old brick oven and are fermented naturally without the use of synthetic or commercial yeasts. We take our time here, and we don’t rush the process because the results are fantastic.  Agaves are careful loaded by hand, and then the door is sealed shut, and steam is injected into the oven. Using the old traditional way, as the agaves slowly cook, starches inside the agaves turn into sugars, and deep caramelization happens.
Once the agaves are cooked, they must cool down.  It takes another 24 hours for them to be at a temperature where they can be hand-removed from the oven, and advance to the next stage in the process.

Crushing:

best organic tequilaAfter cooking, we extract the juice and all the essence of the agave using only a single roller mill.  The agaves are crushed, shredding the fibers and pressing out the sweet agave juice from the pinas.  This process is repeated several times, giving the tequila its unique characteristics and flavor notes. We then reuse the pulp for composting.

Fermentation is done in stainless-steel open-air tanks. Using a special yeast that has been in our family for generations, we allow it to do its job: eat sugars, and produce alcohol. Once again, no shortcuts are taken. We don’t add any other sugars to this process.  All AgaveLuz Organic Tequilas are made of 100% blue agave, and no yeast-accelerating chemicals are added. It may take longer, but the results speak for themselves.  It takes about 4 days before the yeast consumes all of the sugar. When fermentation is complete, we pump it to the other side of the room where it can be distilled.

Distilling:

best organic tequilaAgaveLuz Organic Tequila is double pot-distilled, with the second distillation taking place in a very small, fully-copper pot still. These stills have been in place since the distillery was built and they bring a certain amount of “secret sauce” to the process.
The high contact with the copper allows the still to naturally remove unwanted compounds from the liquid. Distilling slowly at low temperatures results in the best organic tequila, with a rich, full body and silky taste.

Aging:

best organic tequilaAgaveLuz Organic Tequila is aged in used American oak barrels. These barrels are re-chipped and re-charred and bring a great deal of depth and complexity to AgaveLuz Organic Reposado and Añejo tequilas. AgaveLux Reposado rests in barrels for 7 months, and AgaveLuz Añejo remains for 2 years before it is bottled.  The result is the tequila not overly influenced by the oak and allows for the agave profile to shine with just a cooked agave note.

Bottling:

best organic tequilaOur bottles are hand-blown in Jalisco, Mexico. As a result, each one is a tiny bit different. Not only do we produce tequila with traditional methods, we also use bottles the way they were made over 100 years ago as well. Tequila is bottled, capped, labeled, and packed in cases for shipment.
