Tequila is exclusively made from the Weber blue agave plant, which takes 8 to 12 years to mature before harvesting
The harvesting of agave, known as jima, involves skilled workers called jimadores who cut the plant's leaves to extract the piña.
After harvesting, the piñas are baked in traditional ovens or autoclaves to convert starches into fermentable sugars. This process can take up to 48 hours.
Tequila undergoes two distillation processes to purify the spirit. The first distillation produces a low-alcohol liquid called "ordinario," while the second refines it further.
While both are agave-based spirits, their production methods differ. Mezcal uses open-fire roasting, resulting in a smoky flavor, whereas tequila’s agave is typically steamed.
